How much should I buy, as I'm going to change the thermostat?

You could get away with zero if yours is in good condition and you drain it into a container and re-use it, otherwise 50% mix.

50% is overkill, 5 litres should do it, that gives you just over 33% mix with a bit of spillage allowance (13.5 litres coolant capacity).
