
The story was quite vivid as we’d visited Scone Palace last year on the way back from the Scottish bash at Blairgowrie....

....so the thought of White Van Man demolishing both his van and the archway was a tad distressing. Oh well, best cook some lunch to get over the shock!


4 oz self-raising flour, 1 oz sugar, pinch of salt, an egg and ¼ pint milk....

Mix everything up until you have a smooth batter....

....turn the griddle upside-down – this has two purposes, first you don’t get crinkly pancakes and secondly you don’t have to wash up after the fajitas, you just incinerate the crud off the bottom


....heat the griddle, drop a spoonful of batter onto it....

....when the surface is covered in bubbles turn it over....

....cook for half a minute on the other side....

....and you should have something along the lines of this....

I’m a health-food freak as you all know, so why not try adding some blueberries, chopped raspberries and pomegranate seeds to the mix....

....dot the fruit on the batter to try to make faces....

....when you get bored with this, just tip all the fruit into the batter....

....and continue as before....

....oooooohhhhhh – these look promising!


....well come on, it’s healthier than some of the other stuff I’ve done


.... and drizzle with maple syrup - now that’s what I call a top lunch!
