I used these people in the past on our VW van.

I used 2 flexible panels bonded to the roof on plops of Sikka flex to allow a small air gap beneath the panel and the roof. You can belts and braces with screws if you want but I never had a problem with just bonding them. They followed the roof line better than framed units.
The control unit I had ran two batteries switching over automatically to charge the vehicle battery when the leisure was up to full charge. There are two types of controller they offer but I opted for the cheaper and it was fine for our needs.
We used a gas fridge when off grid and LEDs throughout the van all our stuff was low voltage, no inverter.
Look them up and give them a call and they will advise you of what best suits your needs.
They also have appointed fitters who will install the units for you should you wish.
Ours were 2 X 50 watt unit as I recall.
