Middle seats all the way to back
Am I correct in thinking that if I unbolt and remove my rear sliding seat and remove the sliders from the rails I will be able to slide my middle seat all the way back to the rear door and lock it in place there? If I do this people can then sit at the back and use the rear seat belts? This would give me loads of flexibility if possible.

Absolutely correct but beware of accidentally putting semi lowered seat backs through the window.
This can't happen if you leave the back seat runners in situ as they will act as just the right spacer to stop the middle seat going back too far and will also not get lost if you ever want to reinstall the back seat.
You may have to remove one or two stoppers in order to get those spare runners fully back as they are normally not allowed fully back because of the risk of damaging the window.
I find the middle seats are more versatile with their 2/3 split and table backs. I'm using the removed bench in the house as a Clarksonesque sofa.
Strictly speaking, mine are not fullyback but are back enough to just fit with the backs lowered for sleeping. (our lower limbs repose on a forward extension from the seats formed by storage crates. For day to day use the seats can be slid forward to the middle belts if one really must converse with any rear passengers.

I got the back seat out today. I have left the sliders in but pushed to the very back. Had to use an extension bar to get the bolts off as the were very tight. I got the seat out and into the garage myself but it is heavy so I lowered it onto some cardboard and slid it into the garage.
I will see what storage box options there are for sleeping on. That would be a good option if can find the right height and they have flat/cushioned top.
