Thanks to Millie and Connie for keeping Grace and Shannon entertained and for keeping Ethan so busy that he slept well.

Ethan is off lambing for the rest of the week - up at 6am and home by 5pm He helped deliver quads yesterday!

We had a great time, We contributed to the local economy by visiting the pub (The Yakkers) for meals and liquid refreshment. On Saturday we caught the local bus and had a day in Kendel which was good fun. Weather was OK didnt really rain until Monday. Jo you need to take a bit more notice of the cows and sheep.
We got back late on Monday after making diversions to miss the traffic on the M6.
Jo and Chris thank you for organising a great weekend and hopefully see you at the next one.

OLIVES...........THE RECIPE AND METHOD

After a few libations of some lovely vin rouge during the Jacobs Meet over a rather splendid weekend I was asked for me recipe for them there Olives.

So, by popular demand I've put the info down for you, Jo, Karen, Pete, Alan et al!

Ingredients

Green pitted Olives (in brine)*
Fresh Garlic very finely chopped (to taste)
Fresh or dry chilli very finely chopped (to taste/tolerance)
Fresh lemon (lemon juice if you want)
Olive oil**
Corriander seeds - 2 to 3 tablespoons

Method - please follow exactly

Drain the olives - pour brine away and leave the olives for an hour or so (shake sieve occasionally to get rid of most of it)

Either open a can of larger or pour a large glass of wine (either red or white will do)
Drink above libation and relax - repeat as required :D

Crush corriander seeds in pestle and mortar and place into large bowl
Finely chop garlic and chilli and place into large bowl
Take 2 slices from 2 end of the lemon (ensure good flesh is in slices) and chop into small pieces and place into bowl
With remainder of lemon, squeeze the fresh juice and place into the bowl. Ensure there are no seeds [-X

Partake of another libation
And another :mrgreen:

Take drained olives and put into bowl
Cover the ingredients in the bowl with the olives and mix throughly

Place into plastic tub and leave in a cool place (not the fridge) for about an hour and then taste to see if you need to tweak it by adding extra garlic/chilli/lemon - it's all about your own taste so don't be afraid of changing the quantities 8)

Have another libation and enjoy the olives :D :D

*The best ones are in Lidl - a nice big kilo jar for about £1.60 - really good quality and value
** Aldi does really good olive oil, their green top bottle is best for the olives

Thanks for the olive info Oz, question though, can i replace the wine with whisky? will it affect the olive taste???

I've just re-read my method for the olives.........silly me

What I meant so say was place the ingredients in the bowl and cover the olives with olive oil and mix it all in........

sorry for the confusion......maybe I should stay off the libation whilst putting a recipe online #-o #-o

Whiskey and olives don't mix...............they argue to much!
