Battery advice on a 1999 diesel Bongo

Hi all,
Hoping for a bit of advice on a battery issue with my 99 bongo.
Car would not start today after a night in the bad weather we have had up here in the NE of Scotland.
A kind neighbour gave us a jump start and it fired into life no problem.
I kept it running and went for a run of about an hour.
Parked up, switched it off and tried to start again but was practically dead and would barely turn over.
We called the AA as we were away from home on holiday, but before they arrived we got another jump start and it started fine. AA turned up and tested everything and could find no problems. Although he did say that if same thing happens in the morning then to consider getting a new battery.
The car presently has two batteries which are wired up in parallel so I presume this is a dual winter battery set up and not a leisure second battery?
Should I therefore replace both? If so, what spec of battery should I be looking for?
hopefully a straightforward question?
any advice is gratefully received.

you can get just one battery provided you strip out or at least insulate the positive lead to the second as far as im aware
