
For this I used diced beef, none of that poncy minced beef, you might as well crack a tin of Stagg chili open if you’re going to do that.


1kg diced beef, 2 jars Asda hot chili con carne sauce, 2 packets Uncle Ben’s Express Mexican rice


Tip a jar of sauce into the slow-cooker. At this stage it looks like the contents of a PortaPotti


Add the beef....

....and another jar of sauce....

....agitate it with your finger or anything else convenient....

....and switch on – on low heat.

Seven hours later....

....add the rice....

....use a spoon to agitate it now, it’s too hot to use your finger


Another half hour later, chop some coriander and add that to the mix.

Voila - Minimalist effort Chili con carne. Preparation time: 2 minutes. Cooking time: 8 hours.
It was well-received by all at Ashbourne who dared try it. I had the leftovers cold for breakfast
