Bored with Butties phase 36
Red-hot beef with cashews, served with noodles – unbelievable and so simple to do. As this is a lunchtime feast and I haven’t got hours to work with, I got the marinade going as soon as I got to work (and before anyone else was around) and also got the cashews sorted. I even did the washing up. So, come lunchtime, I only had to blitz the beef and then the noodles, eazy-peazy lemon-squeezy!
Muz Jr is doing some work ‘experience’ at the moment so I have a willing assistant.
Beef, cashews, spring onions, ginger, garlic, chillies, curry paste, soy sauce and noodles.
Slice the beef into thin strips.
Chop the spring onions, garlic, chillies and ginger.
Toast some sesame seeds in a dry pan....
....then transfer to a mortar....
....and then get an assistant to grind up with a pestle What do you mean, you don’t carry a mortar & pestle around in your Bongo?
Add the ginger, chillies and garlic....
....some red curry paste and some dark soy sauce....
....and mash up to get something like this
Mix the marinade into the beef and bung in the fridge.
Toast some cashews in a dry pan....
....then add the spring onions....
....and set aside until later.
Several hours later....
Fry the beef mixture to within an inch of its life....
....then add the cashew & spring onion mix.
Fry some egg-noodles in a little oil in a wok with some sesame seeds (Oi, I like sesame seeds, as long as they’re not on a McDonald’s bun )....
....and serve with the beef....
....absolutely amazing

Looks good, but can someone explain why people ruin good food by adding nuts? Nuts are for eating out of little bowls or packets, NOT for putting in great food.
