Exhaust come adrift from bush? Loose spare wheel anchor? (speaking of which, check the spare wheel toolkit is held firmly in the sliding door cubby, it can rattle around in there otherwise) You sometimes may get a tapping sound from the freetop also, chances are its the aerial when its fully erect, some have the litte rubber buffers missing, so it taps against the freetop.

What sort of knocking? constant, over bumps, tinny, or more of a thunk? could be loads of things give us a clue

BDC/Tawse - checked just to make sure, but no asylum seekers there.
It's kinda thunking mainly when it goes over bumps, but occasionally when we turn right!
I also checked for wildlife after we norrowly missed some deer the other weekend. Sure we'd have smelt veal cooking by now if that was the case!

I had a a lot of clunking from the rear whilst going over uneven roads. It sounded like the exhaust or spare wheel was loose, after I had the drop links and ARB's replaced I haven't heard it since.

When it went down for it's last service, they couldn't find anything wrong with it.

I'd go for arb's & droplinks, they may look fine, but it doesn't take a lot of wear to start clunking.
You may be able to do a mikeonb4c/dandywarhol repair to the arb's with some inner tube rubber to pad them out, there's a recent post on this, or I'm sure Mike'll be along shortly.

I believe you mean venison, which I happen to have on the menu this evening, not veal.
On purchase of Bongo I had similar sounds on bumps and cornering and it was the rear droplink.

It improved the overall handling of mine no end as well when I had them replaced.

I had both rear arb clamps let go completely within about 6 weeks of each other
