Quick update and new question on this issue: so we got the fuel pump replaced with a refurbished one and it starts again easily (more to that in a bit!) and it runs fine afterwards also. So the new fuel pump definitely seems to have fixed the previous issue.
The one issue we now have is that when it starts in low temps (on a cold start) it revs up to like 2500-3000 rpms and is a bit smokey also. After like 1min everything goes back to normal (once a certain temperature is reached it seems) and it's fine thereafter until it fully cools out again. A bit of searching on this forum indicates that it might be something to do with the cold start solenoid.
Our mechanic is trying to get things fixed, but it seems when he's able to lower the cold start rpms that comes at the cost of a difficult start (several attempts of cranking needed). Any advice on how to get a smooth cold start while not having rpms that are going through the roof?

We weren't able to fully fix it, but the mechanic managed to adjust the rpm settings to a point where it wasn't too bad anymore. So we left it at that and it stayed like that since then.
