side conversion

Hi guys
Quick question we are continuing with our self build conversion and are purchasing a side kitchen from SPD campers but are being told that the side trim needs to be left on. Personally i see no need for this if we are going to be using it solely as a camper and it would also give us a few more inches space on the side to accommodate a slightly wider bed. Can anyone tell me the reason for this as we were going to put millboard trim to cover the openings and keep the insulation in the use trim felt/carpet to cover the arches.
