Do I need to support the roll bar when replacing the bushes and do I jack up the car while doing it? Is the bar under tension?
I'd guess a simple job but knowing my luck........!

Get the brackets with them and it's an easy job
Support the bars so they don't drop on your face
but not under tension
Easy job if the bolt come out
Might want to start lubeing the bolts up now with some sort of penetrating oil spray

What torque do the bolts require?

Don't think I torqued mine, just did them sensibly tight. The trick with all suspension parts is to tighten clamps, drop links etc with the suspension loaded as it would be in use. Not essential for balljointed front droplinks but for anti-roll bar bushes and rear droplinks do them with car on the ground or axle stands.
