This is ideal for hot summer lunches – remember them?
For best results, get this prepared as soon as you get to work and then by lunchtime the marinade will have worked wonders. Salmon pitta-pockets, done in a lime, coriander & chilli marinade. Absolutely stunning! 

Salmon, prawns, mushrooms, coriander, chillis, limes & salad

Skin the salmon. Now clean all the fish scales off the camera

Chop the coriander & chillis and slice the mushrooms

Dissect the limes. I only wanted four but four were £1.20 and five were £1.00

Squeeze the limes into a bowl and mix with the chillis & coriander

Stick the salmon in a bowl with the mushrooms....

....and prawns....

....and add the marinade

Make sure all the salmon is covered....

....and bung it all in the fridge until lunchtime

Several hours later......

If I was doing this at home I’d now just bung that cazuela in the oven for half an hour. But I’m stranded in the Bongo so slop everything into a scorching pan....

....and fry to within an inch of its life

Meanwhile toast some pittas in a dry pan....what do you mean you only have one frying pan in your Bongo?

....and enjoy a delicious, healthy lunch.
