Spicy scallops in ginger & lime – a quick & easy dish especially if you use Uncle Ben’s Express Rice
Spring onions, ginger, garlic, limes and a red chilli....
....and a some king scallops. King scallops are always better than queens as you get that little bit extra
Chop the garlic, chilli & spring onions, grate the ginger and zest the limes
Fry the spring onions, garlic & ginger in butter for a minute....
....then add the scallops....
....and cook on high heat for a few minutes....
....then add the lime juice, lime rind and chilli
Meanwhile, warm that rice up....
....and serve with the sauce spooned over the top and a few lime wedges
