stalling after a long-ish run

Hullo all;
my first post- I've a Bongo that generally goes well, but has had a recurring problem that's getting worse, over the last few months. After going at speed (m-way/ dual carriageway driving) for some time and then slowing down- typically coming to a stop at the junction at the bottom of a slip-road- the engine dies. It just can't keep the revs up, and seems like fuel starvation, or something to do with the throttle. It takes 2 or 3 goes to re-start, and then idles irregularly. It'll then do it repeatedly whenever I slow right down (all the best places- right turns, roundabouts etc!)
It may be to do with getting hot, as it never does this going at lower speeds, even for long periods, and is OK again once its sat for a while. The fan always comes on when it stalls, too, which may I suppose just be a coincidence, I dunno.
I've changed the fuel filters, had the EGR first blanked off then fixed, both of which seem to have helped general performance, but it still has this problemit in the same pattern. My local mechanic has suggested it could be to do with an electrical throttle sensor/ regulator? Any ideas? Its a bit stressful and somewhat defeats the point of long-distance Bongo missions!
