stopped for fuel and temp shot up

Returning from the Lakes I stopped for fuel and when I returned to my Freda and switched on the ignition my Mason alarm started beeping. The gauge was showing very hot but when I drove away the temp came back to where it usually is. I've not known this before so when I got home I switched off the ignition and left the vehicle for a few minutes then switched on the ignition but this time it just showed the normal position. Anyone any ideas?
Another member of this forum kindly helped with changing coolant a few weeks ago using his compressor. We drained off the old coolant and flushed thro a few times then refilled. I was a bit surprised that it only needed 8 litres of new coolant to fill the system. I have seen it stressed that the bottom hose should be checked to be sure the stat is working. Is this the one I can feel under the bottom left (facing Freda) corner of the radiator - it was hot when I checked it. Ive looked at the exploded drawing of the engine system but cant determine which is the right pipe.

Not 100% sure on this, but here goes. when you stopped there was no air flowing over/around the engine so that fools the temp gauge as the engine is hot especially after the hilly lakes, when you restarted then there was air flow and the temp gauge came back down, my mason is set to just under 5..did your scavenger fans come on at anytime.?
edited . here is the link about scavenger fans.

As you face your Bongo the bottom hose is bottom RIGHT of the Radiator....Very important that you get this quite warm when bleeding....your system takes 13 liters......I would bleed it again to be safe....Dave is quite right ...the temp can rise when you stop and your Mason will reflect this.

The chances of draining out all 13 litres without stripping the whole cooling system is pretty slim, I wouldn't worry too much as long as it's been thoroughly flushed with clean water enough to open the stat (preferably remove stat & use holts 2 part rad flush if you've got a few spare hours) & then bled properly or vacum filled.
Ron did you stop after a heavy bit of driving without allowing it to idle at all? ideally it should idle or at least drive slowly for a couple of minutes, for everything to cool down a bit more gently - saves killing the turbo too.

missfixit - I stopped to refuel so no there was no idling and I guess the advice about it being just the hot block is correct. I have a Mason alarm and now recall that I was showing a friend how it worked and turned the setting knob so I think that maybe I reset it lower than before and that is why it beeped and drew my attention!
Took it for a run to the top of Holme Moss today to get it hot and then checked the bottom hose (on the right as descibed by Haydn) and it was good an hot so I assume from that that the stat is functioning.
What does 'killing the turbo' signify?
Thanks for all the comments.
