BIG E i know this is strange but ive had a overheating probs myself and after changing the thermostat and rad cap i still had coolant lose which in the end i found out to be the expansion tank cap.The big rubber seal on the cap itself had tiny splits in it.I had a brain wave and layed a normal sergical rubber glove over the cap hole then replaced the cap over it.Well the results ........ end of coolant lose.also as i pulled up slightly on the exp cap the coolant rushed to the top of the tank.its one more possibilty to try. i need a new cap myself so is shopping for one.

The symtoms you describe follow exactly what happened to me in the first very cold snap after I got my bongo during winter 2005/6.

Started off fine....4 miles down the road..overheating and water expelled in big amounts from header tank.

After 29 minutes stationry,,refiled tank and off we went cautiously home...got home fine then did a 300 mile round trip no probs.

Diagnosis: Wrong coolant (no anti freeze) and bottom hose has iced up causing blockage until warmed through (thus freeing ice).

Check your bottom hose for obstructions.
