if you have a mason alarm fitted, then the temp guage will move about a lot ,even going into the red zone, the normal position for temp guage without a mason alarm is about 11 oclock ,with a mason it is about 2 oclock and this moves when the engine is being pushed or at standstill.
the setting for the mason is a tad under the 5 on the mason dial (thats what i have it set at) it does the odd bleep now and again if pushing the engine. uphill mainly.

I belive the Mason alarm is doing what it is supposed to do. Makes the temp gauge more sensitive. You didn't worry before you fitted it. You (I think) said you had it set at 4.5. Others I have spoken to have it even higher.
When pushed the bottom hose does get hot (stat opens)
Normal driving it stays cool (stat closed)
I think your system is working o.k.

Lizard,
The bottom hose will eventually reach nearly the same temperature as the top hose if you let it idle and wait a while after pulling up following a 'hard' run. This could be around 70C but usually around 60C.
The ECU turns the fans on using the same relay as the A/C so that is a good way of checking the fans work but you can also check the ECU part of the loop by disconnecting the sensor (above the starter motor) and the fans should come on.
The fans come on when the coolant temperature in the head is about 100C which is about 70/75% of the scale of the Mason modified gauge.
As others have said - if your fans work I think it is runing normally.

If I remember the fans won't come on if the a/c isn't fully charged with gas. So the a/c compressor dictates if the fans come on or not.

According to the manual the scavenger fan comes on if:
The engine bay temp is below -27 deg.C and the coolant temp is over 90 (automatics)
The engine bay temp is below -30 and the coolant is over 90 for manual vehicles
The engine bay temp is over 180 deg (auto)
The engine bay temp is over 171 for manuals

Wow. So it actually works to heat the bay when it's really brass monkeys as well. I guess it won't happen to much in this country though.

After I get the new radiator fitted, my local garage says to remove thermostat altogether permanently -he's apparently done this to a lot of Bongos & says that then they never overheat.
Hard to believe Mazda could be so wrong as to fit unnecessary kit?
I know a bit about air-cooled motorbike engines, but all this plumbing has me scratching my bald patch.

and also means that it takes longer to warm up and use more fuel in the process. So your average mpg now is?

I don't think your garage knows much about Bongo's. If all else is well the stat should be in situ. The vehicle will never get to a good working temp with no stat.
