The sensor is behind the little "grill" on the dashboard, single screw as I recall see here

Welcome. I’ve had 2 V6s, if everything in the cooling system is in good order they do run cool especially in winter weather, my thermostat hardly ever opened unless I was doing 80 on the motorway or towing a caravan uphills, the thermostat opens at 82c so unless you get it to open you will not get hot air, just slightly warm, I had a digital temp gauge fitted and I actually blocked off half the radiator in winter (bottom half) and this solved the cool running. BUT I WOULDN'T ADVISE THIS NLESS YOU HAVE A TEMP GAUGE FITTED, and then keep a eye in it and set it to alarm at 100c. If it keeps alarming reduce the amount blocked off.....you will find a compromise at some point.
