It's worth differentiating coolant loss to overheating. A low coolant alarm will highlight a problem such as a leaky radiator or split hose. The temp gauge mod, or Mason alarm will show you if the engine temp is rising. Lack of coolant will ultimately lead to overheating, but so will other faults such as water pump failure, blocked radiator, scavenger / rad fans, stuck thermostat, etc. With a Bongo (as with any other water cooled vehicle), if there is a problem with with the coolant it should be attended to prevent serious expensive damage occuring. Checking the level every day is one way of doing it, but a low coolant alarm has the additional benefit of warning you of a problem that occurs whilst you are driving. There have been plenty of examples of hoses bursting or clips coming loose while driving which a visual check before you set off is not going to pick up.

Best solution is to fit LCA and modified / addtional temp gauge & then you have all bases covered :)

A quick update, Adrian (Japan Direct) is amazing.He spent a good while on my van, checked over everything, only a sticking brake caliper and a dodgy headlight to report, he's pressure tested the coolant and it's all good.

Good news as tomorrow we're off to France! I'll try and report back with updates but thanks again for your help and cheers to Adrian for his top work.
