So does anyone know, will the clock and cubby from a 626 fit with a single din radio? One like this?

Yes it fits and can be made to work, but figuring out the wiring is the tricky bit and you'll need the plug and some of the wiring from the donor vehicle. I've got it written down somewhere or other.

Cool. I'm about to sell on my bruised and battered 626 so may take this out before moving it on. Any tips on removal?

Yes, it works. We've got one in ours and the wiring wasn't difficult to work out. I think it just pulls out or it's easier if you can push it out from the back.

if its not the more modern digital speedo check if its got a speedo that GA5R on it, they go straight in a bongo and read in miles.
