It will struggle more when the fabric is cold and stiff. Make sure you've lubricated both sides of the bottom runners and the chrome bit of the gas struts. Also, I assume that you are running the engine at the same time as raising the roof - the extra electrical power really helps. You do not lubri...

I've never tried booking at Searles because they are ridiculously expensive. I've also come across sites that won't take singles but, when I've rung them and explained my age, there has been no problem. I think they are just trying to avoid crowds of teenagers on site. Thermostats can easily be ruined when overheating - have you actually checked that it's working?
It sounds as if it could be jammed open, hence low running temperature.
