We weren't able to fully fix it, but the mechanic managed to adjust the rpm settings to a point where it wasn't too bad anymore. So we left it at that and it stayed like that since then.

Quick update and new question on this issue: so we got the fuel pump replaced with a refurbished one and it starts again easily (more to that in a bit!) and it runs fine afterwards also. The bike rack is a Thule T2 Pro XTR, the swing arm is independent, and is a Yakima Backswing. Works great, the only disadvantage is that it makes the van quite a big longer and your departure angle gets quite limited.
