For anyone else who stumbles across this thread, I've had exactly the same problem with a newly purchased 2L petrol Bongo.
When I spoke to a local specialist about working on the van and discussed the lack of reading on the temperature gauge, the first thing he said was 'I've seen several sticking thermostats on the 2 litre engine recently'. Since he replaced it, the van's getting up to temperature and running fine :).
